These are a great option for a quick snack, a little pick-me-up pre- or post-workout, or to cure a sweet tooth.

Pumpkin Energy Bites (AIP friendly)

A little sweet, a little spicy...these energy bites are sure to hit the spot.


  • 1 cup dried dates
  • 1/3 cup pumpkin puree
  • 1/3 cup collagen powder
  • 1/3 cup unsweetened coconut flakes (more if you wish to roll your bites in coconut)
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • Pinch of sea salt


  1. Let dates soak for 10 minutes in a small bowl and cover with water, then drain.
  2. Mix all ingredients together thoroughly using a food processor. Pulse until combined and adjust the spices to taste.
  3. Place in the refrigerator to chill for at least 30 minutes before rolling into small balls. If you wish, roll them in crushed coconut. Store in the refrigerator in an airtight container. ENJOY!
